Traditionally manufactured from a blend of goat and sheep milk, halloumi is a firm, brined, somewhat springy white cheese from Cyprus, however, nowadays cow’s milk is also used. Its texture is comparable to that of mozzarella or thick feta, but the brine preservation gives it a distinct, salty flavor. The Halloumi becomes a creamy texture and loses all of its salinity when it is cooked.
